Baked fish Capone
you have
1 capon fish at least 1 kg
2 potatoes
4 tomatoes
extra virgin olive oil
salt
pepper
procedure
Clean the capon. Peel the potatoes, cut into thin slices and place them in cold water. Cut into thin rounds even tomatoes that will be needed to cover the fish. In a roasting pan or on a baking sheet make a potato bed on which will place the capon. Cover with tomato slices, drizzle with a little olive oil, salt, pepper and bake at 200 degrees for about 30 minutes.
