Eviscerated eels, rub them with a cloth rather harsh that removes the slimy coating. Insert them into a circular shape and put the spit between the one and the other a bay leaf. Salt them thoroughly and place them on a wood fire. Cook for 15 - 20 minutes stirring frequently during cooking.
