Potatoes soup
dispose of
3 or 4 potatoes
4 or 5 tomatoes
1 chopped white onion
1 carrot
paste (to taste)
salt
extra virgin olive oil
parsley
procedure
Cut the potatoes and tomatoes into cubes. Sauté gently in a little oil the onion and chopped carrot. the potatoes and let them flavor in soffritto.
Aggiungete tomatoes now just the onion is wilted, add.
Then add plenty of water, cover the saucepan and bring to the boil. When the potatoes are almost cooked you can add the pasta, add salt and cook. If you wish, add the parsley and serve.
