procedure
Place the snails in a basket with bran or breadcrumbs soaked and squeezed. Cover and leave to drain for 2 or 3 days, then put the snails in a bowl with salt, a little 'of water and vinegar, shaking them occasionally.
After a bit 'put them again in clean water with salt and vinegar. At this point wash them thoroughly and place them in a bowl with the garlic and the red pepper, cover with water, add salt and boil until cooked.
Drain the snails, place them on a serving plate and dress with olive oil and parsley very finely chopped.
