Fried Zucchini Flowers
dispose of
3 eggs
1/4 liter of milk
salt
300 grams of flour (100 grams of flour per egg)
courgette flowers freshly picked
procedure
Clean the flowers, opening the calyx of the flower and eliminating the central pistil, remove the stem and the filaments and then wash them. In a large bowl, blend the eggs with the milk, salt and gradually add the flour until you have a smooth mixture. Plunge now flowers. In the meantime you heat the lard (or olive oil) in a large skillet. When the lard is hot immerse the zucchini flowers. When the flowers have reached a nice golden color spread out on absorbent paper.
